I tried to find my spice waffle recipe and couldn't. So, here is a revamped version. I used eggs as it was Christmas and I use real eggs for some holiday cooking.
Some weeks, there is nothing better than a hot chocolate and a paperback novel (or e-book). The world feels simpler when you take the first sip of that rich chocolate and let the words of other authors spirit you away from the perpetual storm of everyday monotony.
Oddly, it is the slow pace of vacation that makes it hardest to put down the book and pick up a pen until I have binged on half a dozen stories. Only then does the ghost of my quill refuse to be still. I think it is because I need to refill and refuel, but sometimes I wish that I could simply sit down, put my fingers to the keyboard, and have words pour forth. This is a little like earlier blogging, perhaps because this is half a letter to my friends, a quarter diary, and a quarter random notes to myself—like recipes and cute tales that aren’t quite full stories… yet.
Yet, even after over 100 blog posts that were supposed to capture my all the little chaos that flows through my sieve of a brain (well it is a sieve when it related to home stuff, and a steel trap when related to other…), I could not find the waffle recipe that I was sure I had posted when I first started blogging.
Today, in the spirit of reflection and creativity, I’m excited to share my spice waffle recipe, which I was searching for on Christmas. After all, what embodies the holiday spirit more than spice waffles, hot cocoa, and a good story?
Waffle Recipe:
Ingredients
1/2 cup of rice flour
1/2 cup of almond flour
1/4 cup of coconut flour
1 Tablespoon of baking powder (I know some people go up to 3 to make it fluffier.)
1/4 teaspoon of salt
1 teaspoon of cinnamon
1/2 teaspoon of cardamon
*1/2 teaspoon of black pepper (optional)
1/4 teaspoon of vanilla powder or 1 teaspoon of vanilla extract
1/8 teaspoon of clove
2 eggs
1 3/4 cups of milk (or 1 1/2 cup of oat milk, and add a little extra butter or ghee)
2 Tablespoons of maple syrup or honey
1/2 cup of ghee or butter
If at all possible, enlist a friendly Miniature American Shepherd to assist. They’re great at sorting ingredients!
Prepare the Dry Ingredients
In a large mixing bowl, combine the following ingredients: flours ( I tend to use 3 types), baking powder, salt and spices.
Mix these dry ingredients thoroughly to ensure even distribution.
Add Wet Ingredients
Next, add the remaining ingredients to the bowl: eggs, maple syrup, ghee/butter and milk.
Combine Ingredients
Using a fork, mix the ingredients until they form a smooth batter. The mixture because we are using eggs should be liquid. If you are using egg replacements the texture will be different. When I use egg replacements I often have to make more of a dough.
Pour into the Waffle Maker
Close the lid and wait for it to beep when it is ready. Note that some makers the beep means to flip it. I tend to set mine to 6 for cooking. I like it nice and crispy on the outside.
Topping to Taste
Top your waffle with the good stuff. Now, I really like fig jam on mine, when it is a spice waffle. If I am making vanilla waffles then I like fresh berries and cream. But I know others, like Tod, are down for the old fashion maple syrup. However, you like it make sure to take time to enjoy.
